Mojitos are so good and refreshing, try this frozen version during a hot summer day.
(Makes 2 servings)
1/4 cup simple syrup (equal parts sugar and water, boiled together until sugar dissolves) or agave nectar
1/4 cup lime juice (from 2-3 limes)
12 mint leaves
1/2 cup (4 ounces) light rum
2 cups ice
Blend the sugar syrup, lime juice, mint leaves, and rum until smooth. Then add the ice and finish blending. Pour into glasses, and garnish with lime slices and mint sprigs.
