I love a good Pina Colada, with all of its creamy coconut goodness. This version is even yummier with the addition of banana and peach. Perfect for pretending you’re on a tropical beach.
Makes 2 servings
2 bananas
1 cup peaches (frozen or fresh)
1/2 teaspoon vanilla extract
1 cup ice
1/4 cup sugar
1/4 cup milk
1/4 cup yogurt
2 ounces rum
Throw everything in the blender together, and blend until smooth. Then relax, sip, and enjoy.
It’s like a creamsicle for adults, only as a drink. These are so easy to make – just toss it all into your blender and blend until smooth. These also make a great Saturday brunch drink, or you can even freeze them and enjoy as a popsicle!
2 oranges (peeled)
handful of ice
1 cup plain kefir (or yogurt)
1 tablespoon sweetener (sugar, honey, or agave syrup)
2 ounces of white rum
This is a great drink to whip up for a weekend brunch. We usually use kefir instead of yogurt, but whatever you have on hand will work. Throw everything into your blender and blend until smooth.
Makes 2 servings
2 oranges (peeled)
1 banana
handful of ice
1 cup of plain yogurt or kefir
2 ounces of white rum
Save a little of your leftover coffee in the morning and then store in the fridge until you are ready to make this yummy drink. The original recipe called for Amaretto. I didn’t have any in the house, so I just threw a banana in instead, and let me tell you: that was the best call. Not only did it make me feel like I was adding some healthy goodness to my drink, but the banana and the coffee were a great combination. I will be making this again soon!
1 small banana
2 tablespoons of whipping cream
2 ounces cold black coffee or a shot of espresso
1 tablespoon maple syrup
1 cup of ice
2 ounces of white rum
grated bittersweet chocolate
Throw everything, but the chocolate, in the blender with about a cup of ice and blend until smooth. Pour into a tall glass and garnish with grated chocolate.
Instead of mimosas for brunch, try this refreshing twist on a champagne cocktail. Perfect for spring, when strawberries are fresh and in season! Below are the ingredients and simple instructions.
(Makes 2-3 servings)
1 pound strawberries
6-8 mint leaves
1 cup ice
Champagne
Add the strawberries, mint leaves, and ice to your blender and blend until smooth. Pour into two glasses, and top each off with the champagne.
Peaches are so tasty and when mixed with cream of coconut, it is a dream in a drink. Frozen peaches are available all year long, but if you can go ahead and freeze them when in season.
(Makes 2 servings)
4 ounces light rum
1/2 cup orange juice
1 tablespoon cream of coconut
2 cups frozen peaches
1 tablespoon sugar
2 cups ice cubes
Add all of the ingredients and blend until smooth.
I love adding something fun and colorful to champagne. With just two ingredients, it couldn’t be easier. I am thinking of trying this with frozen raspberries next time instead of ice – because in this house, there is no such thing as too much fruit!
(Makes 2 servings)
1 1/2 cups raspberries
1 cup ice
Champagne
Blend the raspberries with the ice, on high, until the seeds have been pulverized (a high tech blender like Blendtec certainly helps with this). Split between two glasses. Gently fill each glass with champagne and stir lightly.
